Solubility in water: Insoluble in water; freely soluble in ethanol, methanol, propylene glycol; soluble in fats and oilsButylated hydroxyanisole (BHA) is an antioxidant consisting of a mixture of two isomeric organic compounds, 2-tert-butyl-4-hydroxyanisole and 3-tert-butyl-4-hydroxyanisole. It is a waxy solid used as a food additive with the E number E320. The primary use for BHA is a food additive used as an antioxidant and preservative in food, food packaging, animal feed, cosmetics, rubber, and petroleum products. BHA also is commonly used in medicines, such as isotretinoin, lovastatin, and simvastatin, among others. BHA has been added to edible fats and fat-containing foods for its antioxidant properties as it prevents food from becoming rancid and developing objectionable odors. It is normally insoluble in water, but can be treated in order to make it so. BHA is of commercial interest as it reduce the rate at which other substances undergo oxidation. It has long been used as a preservative in foods containing fats, which turn rancid by oxidation. The Select Committee on GRAS (Generally Regarded as Safe) Substances of the U.S. Food and Drug Administration (FDA) reported in 1980 that no evidence exists to indicate that BHA is a health hazard. This point is disputed by some other studies.

CAS number: 128-37-0
Einecs EC number: 204-881-4
Molecular formula: C15H24O
Molecular weight: 220.35 g/mol
Appearance: White powder or crystals

Melting point: 70–73°C
Boiling point: 265°C (538 K)
Solubility in water: 1.1 mg/L (20°C)Butylated hydroxytoluene (BHT), also known as butylhydroxytoluene, is a fat-soluble organic compound that is primarily used as an antioxidant food additive (E number E321) as well as an antioxidant additive in cosmetics, pharmaceuticals, jet fuels, rubber, petroleum products, electrical transformer oil, and embalming fluid. The species behaves as a synthetic analogue of vitamin E, primarily acting as a terminating agent that suppresses auto-oxidation, a process whereby unsaturated (usually) organic compounds are attacked by atmospheric oxygen. BHT, is an anti-oxidant which reacts with oxygen free radicals to slow down the auto-oxidation rate of ingredients in a product that can cause changes in the taste or color. As such, it is primarily used to prevent fats in foods from becoming rancid.
